Millets: Foxtail Millet Upma

Foxtail millet upma is a nutritious and flavorful South Indian dish made with foxtail millet, vegetables, and aromatic spices. It's a wholesome breakfast or snack option that's easy to prepare and packed with essential nutrients.

Ingredients:

  • 1 cup foxtail millet
  • 2 cups water
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 cup chopped onion
  • 1/4 cup chopped carrots
  • 1/4 cup chopped green beans
  • 1/4 cup green peas
  • 2-3 green chilies, chopped
  • 1-inch piece of ginger, grated
  • A few curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  1. Rinse the foxtail millet thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, chopped onions, green chilies, grated ginger, and curry leaves. Saute until onions turn translucent.
  3. Add chopped vegetables (carrots, green beans, peas) and saute for a few minutes until they are slightly cooked.
  4. Add the soaked foxtail millet to the pan and mix well with the vegetables.
  5. Pour in 2 cups of water and add salt to taste. Stir everything together, cover the pan, and let it cook on low heat for about 10-15 minutes or until the millet is cooked and water is absorbed.
  6. Once the foxtail millet is cooked, fluff it with a fork and garnish with fresh coriander leaves.
  7. Serve hot foxtail millet upma with coconut chutney or pickle.
