Ingredients:
- 1 cup foxtail millet
- 2 cups water
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 cup chopped onion
- 1/4 cup chopped carrots
- 1/4 cup chopped green beans
- 1/4 cup green peas
- 2-3 green chilies, chopped
- 1-inch piece of ginger, grated
- A few curry leaves
- Salt to taste
- Fresh coriander leaves for garnish
Method:
- Rinse the foxtail millet thoroughly and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, chopped onions, green chilies, grated ginger, and curry leaves. Saute until onions turn translucent.
- Add chopped vegetables (carrots, green beans, peas) and saute for a few minutes until they are slightly cooked.
- Add the soaked foxtail millet to the pan and mix well with the vegetables.
- Pour in 2 cups of water and add salt to taste. Stir everything together, cover the pan, and let it cook on low heat for about 10-15 minutes or until the millet is cooked and water is absorbed.
- Once the foxtail millet is cooked, fluff it with a fork and garnish with fresh coriander leaves.
- Serve hot foxtail millet upma with coconut chutney or pickle.
